Sake Lab OWL has embarked on a new journey to share Japan’s rich fermentation culture with the world. In collaboration with Tokyo Minato Brewery, based in the heart of Tokyo, we have officially begun production of a limited-edition sake brewed specifically for the European market. We are delighted to give you a behind-the-scenes look at this craftsmanship, which is steeped in passion and tradition.

We believe that Sake is far more than just an export commodity; it is a cultural “experience” that should connect deeply with local food cultures. To bring this vision to life, we have teamed up with Tokyo Minato Brewery. To ensure people in Europe experience the true, vibrant breath of fresh Sake, we had absolutely no hesitation when choosing our foundation.
Our journey begins with our choice of rice: the legendary Aiyama (愛山).

The “Diamond” of Sake Rice: What is Aiyama?

First developed in 1949, Aiyama boasts a lineage that can only be described as royal. Its grandparents are Yamada Nishiki, revered as the king of Sake rice, and Omachi, a historic and celebrated heirloom variety.

Because it was originally used by only a handful of select breweries, it became incredibly scarce. Even today, it is highly sought after and known as one of the most expensive and elusive sake rice varieties in Japan—a true “Diamond” in the world of brewing.

The rich, full-bodied profile of Aiyama allows it to effortlessly transcend the boundaries of traditional Japanese cuisine.
Thanks to its profound depth and elegant acidity, it pairs magnificently with hearty, flavorful local European dishes—such as pasta in rich cream sauces, pan-seared white fish with a rich butter finish (poêlé), or a selection of local artisanal cheeses.

Aiyama is, without a doubt, the perfect partner to embody Sake Lab OWL’s mission: creating a brand-new “mariage” with local food cultures across the globe.

A Matter of Seconds: Creating the Backbone of Sake Through “Washing & Soaking”.

While steaming breathes life into the rice, the preceding steps—washing and soaking—are where the “blueprint of the Sake” is meticulously crafted.
The Aiyama rice we use is exceptionally delicate; it absorbs water incredibly fast and breaks down easily. If the rice absorbs even a fraction too much water, it can cause off-flavors and completely ruin the subsequent Koji-making process. Conversely, if it doesn’t absorb enough, the core of the rice remains hard, making it impossible to brew high-quality Sake.
To achieve our ultimate goal—extracting the “rich complexity and beautiful acidity” that perfectly complements European dining tables—we must control the water content with absolute precision, without a 0.1% margin of error.

The master artisan’s touch: swiftly yet gently washing away the bran in ice-cold water, ensuring the delicate surface of the rice remains perfectly unblemished.

As it absorbs the water, the Aiyama rice begins to change, its “Shinpaku” (the crystal-clear core) glistening with a beautiful, translucent radiance.

Only the rice that has absorbed the perfect amount of moisture through this high-stakes, second-by-second challenge is permitted to move forward to the dynamic steaming process.
